Pelegrini was opened in 2010 by Rudolf “Rudi” Štefan in an 800-year-old stone house directly opposite the Cathedral of St. James. The rise from small konoba restaurant to Michelin-starred establishment took seven years — since 2017 the restaurant has continuously held one star and is one of only three starred establishments in Dalmatia. The concept follows four flavor elements: acidity, melt, warmth and salinity. Štefan’s cuisine is a modern interpretation of traditional Dalmatian flavors — not an avant-garde spectacle, but a very precise reading of local culinary identity. Products come exclusively from small producers in the Šibenik hinterland, from the city market and from fishermen in the bay.

Pelegrini is located at Jurja Dalmatinca 1 — directly on the square in front of the Cathedral of St. James, one of the most significant Renaissance structures in the Mediterranean and a UNESCO World Heritage Site since 2000. The location is both symbolic and practical: those dining at Pelegrini look out at the cathedral façade during aperitifs, hear the bells in the evening and enjoy the stone square almost like a private terrace once the day visitors have left.

Distance to D-Marin Mandalina
From D-Marin Mandalina you can reach Pelegrini in five minutes by water taxi or twelve minutes on foot along the waterfront promenade. Those chartering from Mandalina can round off embarkation evening with a 90-minute tasting menu at the cathedral and walk back to the yacht at leisure — the route leads through the old town with its narrow Renaissance alleyways.
Chef Rudolf Štefan and His Team
Rudolf Štefan is from Šibenik and cooked in top restaurants in Spain, Italy and Slovenia after his training, before returning home in 2010 to open Pelegrini. His cuisine is deliberately local: Štefan describes himself not as “creative” in the avant-garde sense, but as “faithful” — he is concerned with reviving Dalmatian flavors, not deconstructing them.

The team comprises six cooks and three sommeliers for a maximum of 24 seats per service — a ratio that is unique in Dalmatia. The service is formally warm, neither stiff nor casual: guests receive background stories about each dish without it seeming didactic.

4-Course Menu
€165 per person, optional with wine pairing +€95. The compact menu focuses on four main elements: a fish or seafood course, a vegetable course from the hinterland, a main course with local lamb or wild fish and a dessert with Dalmatian flavors such as olive oil, lavender or fermented fruit.
6-Course Menu
€195 per person, with wine pairing +€119. The extended composition adds a pasta or risotto course as well as a second starter and a cheese course before dessert. Recommended for guests with time and interest in the full culinary spectrum.
Wine List “Pelegrini & Friends”
Pelegrini maintains its own wine line under the name “Pelegrini & Friends”, in collaboration with small Croatian winemakers from Pelješac, Brač and the Šibenik hinterland. The regular wine list includes around 250 positions focusing on Croatia, Italy and Slovenia. The wine pairings are excellently curated — those willing to spend the money should definitely order them.

Embarkation Evening with Style
A reservation for 6:30 PM on embarkation day works seamlessly: 90 minutes tasting menu, then at 9:00 PM a relaxed water taxi ride to Mandalina Marina, aboard the yacht and early to sea the next morning. We coordinate this together with the charter booking on request.
Post-Charter Gourmet Highlight
After a week of galley cuisine, star-level fine dining tastes especially good. A reservation for the evening after disembarkation, combined with an overnight stay at D-Resort Šibenik, is one of the most frequently booked packages we arrange.
Limited Lunch Service Window
Pelegrini has continuous lunch service Monday through Thursday from 12:00 to 4:30 PM — unusual for a starred restaurant. Charter guests making a port stop in Šibenik can therefore also schedule a shortened tasting experience at midday without losing the evening cruise.
